700g pork leg joint
3 teaspoons cajun spice
3 teaspoons bbq sauce
3 teaspoon ketchup
2 teaspoons vinegar
2 piches salt
Place pork joint onto foil and dry rub in 2 teaspoons cajun spice and place into preheated oven to 140 degrees or gas mark 3 and slow cook for 2.5 to 3 hours until thoroughly cooked.
When cooled pull the meat apart using 2 forks holding the meat with one fork while scraping the meat into shreds with the other.
When all the meat has been shredded or ‘pulled’ then add the spices, sauces and vinegar to the meat and mix well
When the spices have been blended through the meat its ready to serve either hot or cold
Freeze for an on hand tasty treat.
Serve with spicy wedges, rice or fresh salad. Great in sandwiches or wraps for lunches
